The Lizard...

Here in NM we have a ton of lizards. And Kurtis has always been able to catch wild animals (when we were dating he would catch birds). So this is not the first lizard he has captured since living here but it was the biggest, so I pulled out the camera (no lizards were harmed in the taking of these photos). ;)

I just have to say that I am actually terrified of the lizards... but the kids love them.

Happy Birthday To ME!!

This year Kurtis went all out for my birthday!! He made a strawberry cake with cool whip and angle food cake!! And it was delicious!!
Isaac loved the cake!

He also made a balloon drop!! It was super fun and kids loved it!!






Thanks Kurtis for a wonderful birthday!! You are amazingly creative and the best husband ever!! I could not ask for more!!

Oh Costco




So our last jogging stroller was stolen, so we have been looking to get a new one and we found this guy at Costco for less the 150 dollars!! It also converts into a bike trailer!! We love it!

Father and Sons Camp Out

So while Kurtis and Derek were "off roading" in his echo... they got stuck and you can see that his back tire is not on the ground... I am glad that he got Derek out of the car while he got it unstuck.

Derek and Miles were loving the great outdoors!! Boys will be boys!!

I must admit that I was really really nervous to let these boys go off on an adventure with out me... but they made it home safe and I am sure that I did not get all of the details and I am okay with that.

I know that Derek's sun hat is not the most stylish thing in the world but for us fair skinned people, NM is way too sunny. We must stay covered!

So after many, many hours of practice... Kurtis finally landed the helicopter on the fan. It was a proud moment for us all!

Mozzarella Sticks

SOOO I made these tonight and yes they are super yummy and Kurtis' new favorite food! And trust me, you must use the panko bread crumbs. I got them at Trader Joe's but I think I have seen them at Sunflower Market as well!!


  • 16 pieces String Cheese, Removed From Wrappers
  • ½ cups All-purpose Flour
  • 2 whole Eggs
  • 3 Tablespoons Milk
  • 1 Tablespoon Dried Parsley Flakes
  • Canola Oil, For Frying
  • Marinara Sauce, For Dipping
  • 2 cups Panko Bread Crumbs

Preparation Instructions

Slice string cheese pieces in half, for a total of 32 pieces.

Place flour in a small bowl.

In a separate bowl, whisk eggs and milk.

In another separate bowl, combine panko bread crumbs with parsley flakes.

TO ASSEMBLE: One by one, roll mozzarella sticks in flour, then dunk in egg/milk mixture, then place in panko crumbs. Use your hand to sweep crumbs all over the mozzarella stick. Gently remove and place on a tray or cookie sheet. Repeat until all mozzarella sticks are coated.

***Place tray in freezer for 20 to 30 minutes to flash freeze.***

TO COOK: Heat 1 1/2 inches canola oil in a large skillet over medium heat. When hot, add mozzarella sticks 8 at a time. Watch closely and turn over to evenly brown, cooking less than 2 minutes. Do not allow cheese to bubble and leak.

Remove to a paper towel-lined plate.

Serve immediately with warm marinara sauce.




The Truck and Treats










Grandma and Grandpa Ford sent Isaac a birthday present that he just loved!! The treats were gone in seriously 5 mins.
